Our pigs are all pedigree Gloucestershire Old
Spots, a breed which we chose after much research as they are placid and easily
managed, hardy and excellent for outdoor breeding, a respected and well known
English traditional pedigree breed, and importantly because they are renowned
to produce some of the best tasting pork of traditional breeds. We certainly
have found that the crackling on joints, succulence & depth of flavour of
both fresh joints and our dry cured bacon is noticeably different from anything
available commercially today.
Standard cuts and sausage
varieties are available most weeks. We always have Plain sausages and Old
Variety which are a blend of warm spices and herbs. We also have standard
flavours including Pork Apple & Cider, and occasionally
a special 100% meat fresh Chorizo.
Fresh Joints always available include Boneless Leg
and Boneless Belly. Loin Joints and Chops are available to order.
We always have our own dry cured
Back Bacon which is cold smoked over hardwood chips. (Unsmoked also available)
Gammon steaks during summer, and Gammon Joints seasonally (Order early for
Christmas!)
We can produce small batches of
sausages to order if you require something non standard such as gluten free or
preservative free. The minimum order for these is around 5lb batch weight. Gluten free are
slightly more per kg, but if you just want preservative free these are available at our standard
prices. We would recommend gluten and preservative free sausages are frozen
within a day or two to give the best presentation.
Our free range pigs are reared
traditionally, as suits one of the oldest English pedigree breeds.
They have no nose rings and
therefore are able to follow instinct and root around in their paddocks freely.
They are housed in traditional
arks all year with straw for bedding and complete freedom to their paddocks at
all times.
They are fed twice a day; on GM
free cereal nuts which are free of antibiotics and growth promoters. They have
free access to fresh water and apart from their natural foraging they get the
occasional vegetable treat from the allotment.
We hope this gives you an insight
into how we raise our pigs. We are not a large producer, and want to ensure
that our food is cared for and produced to the highest possible welfare
standards. We want our pigs to be happy while they are with us, and we hope
this is reflected in the product we offer.
